Inspired by the Romanian fable of the “lump of salt” (drob de sare), often a symbol of fear or hesitation, NOUA chooses to embrace it—turning it into a shimmering crystal of possibility. NOUA offers a 17-course tasting experience (subject to seasonal change), each dish designed to surprise, inspire, and awaken your senses. While the portions are small, they are rich in story and complexity—allowing you to enjoy the full journey without feeling overwhelmed. The tasting lasts around 2 to 3 hours, and each course is presented with a short explanation about its origin, inspiration, and the message it carries.
